Zucchini as pasta

I am not the first to write about zucchini as pasta.  I am not the first to write about any vegetable as pasta.  A friend who bought a machine to make zucchini into pasta told me her daughter kept asking her to make it, again, and again.

My last post was about my new favorite salad.  Cucumber Salad.

But the first vegetable we sent through that machine?  Zucchini.  Zucchini and cucumbers are similar, and once we spiraled zucchini, I knew I had to try a cucumber.

The learning curve on this machine is interesting.  Figuring out which blade you want to use for each dish, for each vegetable, makes each new dish that much sweeter.

So, what have we done with zucchini?  I learned that I do not love raw zucchini.  I like it better cooked.  I also thought about adding flavor.

What will you make with your spiralizer?  I truly want to know.  Low carb eating is so much nicer with friends.
